Sandra Lee Lang-Longseth, age 71, died Monday, January 18, 2021 at her home.
Sandy was born on July 5, 1949 in Mankato, MN to Edward and Mary (Owens) Engelking. She graduated from Lake Crystal High School in 1967. She owned Sandy’s Diner in Eagle Lake, MN and later sold it and moved to Rochester. She was a waitress and a coordinator for REM.
Sandy enjoyed playing bingo, going to the casino and playing cards.
Sandy is survived by her son, Scott Burgess of Mankato, MN; sister, Judy Smude of Rochester, MN; brother, Jim Engelking of Rochester, MN and Edward Engelking of Winona, MN; special friend, Loren; grandchildren, Scotty, Tiffany and Cody; and many great grandchildren
Sandy is preceded in death by her parents; half-brother, Arnie Owens; sister, Mary Lou Engelking and Carolyn Verchota; brother, Bill Engelking; son, Shawn Lang; and twin granddaughters.

I can’t believe she is gone. My condolences to the family. Sandy and I were friends even though we did not always agree with each other. Sandy had a big heart. She would cook for herself but make so much food and would share with many of us. Every year she made a turkey dinner for the people here at Northgate for the many people who had no where to go. She frequently did this for Christmas too. I’m going to miss her so much. Say hi to my mom Sandy. Tell her I love her a miss her. Know how much you loved my mom Sandy.
